Ingredients

  • 2 cups cooked quinoa
  • 1 English cucumber, diced
  • ½ cup chopped fresh mint
  • ½ cup chopped Italian parsley
  • ½ red onion, diced
  • 1 (15 oz) can garbanzo beans, rinsed and drained
  • ½ cup crumbled feta
  • ½ cup roasted, salted shelled pistachios
  • Lemon Vinaigrette: ¾ cup olive oil
  • Lemon Vinaigrette: 1 lemon, juiced
  • Lemon Vinaigrette: 1 tsp salt
  • Lemon Vinaigrette: 3 cloves garlic
  • Lemon Vinaigrette: ½ tsp cracked pepper

Method

    Cook quinoa according to package instructions and let cool.

    In a large bowl, combine the cooled quinoa, cucumber, mint, parsley, red onion, garbanzo beans, and feta.

    Blend the vinaigrette ingredients (olive oil, lemon juice, salt, garlic, and pepper) until smooth.

    Pour the vinaigrette over the salad and toss to coat.

    Top with the pistachios just before serving so they stay crunchy.
