Blueberry, Basil & Burrata Salad

Ingredients

  • 4 c arugula
  • ½ c fresh basil, julienned
  • 1 c fresh blueberries
  • ¼ c basil olive oil from Baker and Olive (or more if needed) — a regular good quality olive oil also works
  • 2 balls of fresh burrata
  • 3 T wild blueberry balsamic vinegar from Baker and Olive
  • ¼ c toasted pine nuts
  • Coarse salt and cracked pepper
  • Additional basil leaves, torn and whole, for garnish

Method

    In a serving bowl or platter, toss arugula and basil with the basil olive oil and a generous amount of salt and cracked pepper.

    Tear burrata into 3 or 4 pieces and arrange on top of the arugula.

    Sprinkle blueberries over the salad and drizzle with the blueberry balsamic vinegar.

    Finish with toasted pine nuts, additional basil, and a final pinch of finishing salt.
