Ingredients
- 4 c arugula
- ½ c fresh basil, julienned
- 1 c fresh blueberries
- ¼ c basil olive oil from Baker and Olive (or more if needed) — a regular good quality olive oil also works
- 2 balls of fresh burrata
- 3 T wild blueberry balsamic vinegar from Baker and Olive
- ¼ c toasted pine nuts
- Coarse salt and cracked pepper
- Additional basil leaves, torn and whole, for garnish
Method

In a serving bowl or platter, toss arugula and basil with the basil olive oil and a generous amount of salt and cracked pepper.

Tear burrata into 3 or 4 pieces and arrange on top of the arugula.

Sprinkle blueberries over the salad and drizzle with the blueberry balsamic vinegar.

Finish with toasted pine nuts, additional basil, and a final pinch of finishing salt.
